"Hidden" in Barcelona rarely means undiscovered — it means unphotographed, or simply one street off the route everyone walks. This plan strings together places that locals actually use, and the connective tissue between them is the point as much as the stops.

Are these places actually still local?
Mostly. Some, like the century-old cava bars, are firmly on the tourist map but remain genuinely local in how they operate — no reservations, no menu in six languages, and a crowd that lives nearby.
How much walking is involved?
Several hours of it, with one real climb at the end. Flat shoes matter, and the old city is cobbled throughout. Consider public transport for the final leg up the hill if the day is hot.
What is the best day to do this?
A weekday. Weekends bring the crowds these places are worth avoiding, and several of the smaller bars keep reduced Sunday hours or close entirely.
